Happy Easter

Hi Everyone,
Nothing like getting the recipes up just under the wire.  Knowing that many of you have an Easter Brunch celebration, I hope I am not too late.  For a brunch, we make banana bread, scones and in the past had French Toast.  This year though I wanted something different and Molly has been hounding me for a savory low protein egg, so I started fiddling with a quiche.  I am so happy with this recipe - it is delicious. 
 
For dinner this year we are having biscuits, potato au gratin, oven roasted portabellas with sherry gravy, roasted asparagus, broccoli and string bean casserole.  I am making roll-out sugar cookies in Easter shapes and a yellow cake for dessert.  I really better get busy! 
 
The kids are excited about the Easter Bunny and cannot wait for his low protein chocolate.  Molly told everyone last year that I did not like the Easter Bunny because I was jealous that he could make low protein chocolates so much better than me.  It is sad but true.  He makes the most delicious Twix-like Easter bunnies.  I am not sure how he does it, but if I had to take a guess I would say he makes low protein roll out cookies in a bunny shape.  He must take caramels and melt them, then pour it on a flat surface on parchment paper so that it is a thin layer and using the same cookie cutter, cut out bunnies.  He likely puts the caramel on the cookie and then dips it in almond bark.  Like I said, it is just a guess. 
 
I hope you all like the Who Do You Cook For? section on the site.  I love the idea and look forward to putting more faces to the names.  We are hoping to revamp this Let's Dish section so that it is more interactive, but it might take some time to get the funds together.
 
It was so nice meeting so many of you at the NPKUA in Texas - what a great organization and what wonderful presentations!  I hope those of you that could not go get a chance to view them on NPKUA's website -- Susan Waisbren's lecture was particularly good. 
 
I have started doing a few cooking classes to help raise the money needed to cover the expenses of the site.  We had a class in Gainesville Florida in January -- what a nice group of people, and have another one in Orlando in April (there is a link on the homepage if you are interested).  I will be in Delaware in June and Utah in the Fall.  We have reached 1500 members so I am hoping that we can get some corporate sponsorships as well now that we are established.  You can help by mentioning us at local events to vendors - the more that have heard of us, the better the chances of us getting funds. I am even considering advertising on the site, but would prefer to avoid that if we could.
