Phoebe

My name is Jen Crowe and I cook for the always adorable, often silly, and seldom tired Phoebe Jean. Phoebe was born on August 9th of 2008 at Pennsylvania Hospital in Philadelphia. She arrived 3 days early and was a rapid, natural birth, at only 7 and a half hours from first contraction to her world debut. Her dad Paul and I were more than a little astonished and nearly had to name her Subaru.
 
Let me tell you a little about Phoebe. First, she has a 3-bird name, “Phoebe,” “Jay” “Crow” (Phoebe J Crowe). She also goes by a wide variety of nicknames: Pheebs, Pheebertstein, Pheebalicious, Stinkerpants, Stinker, Punkin, and Monkey to name a few. She loves the water (though she cannot yet swim), has an amazing laugh, and wrinkles her nose dramatically when she smiles. She loves her 2 dogs and cat, and spends a great deal of time working out ways to corner them. Phoebe has never met a swing or slide she didn’t love, and is a wonderful little friend to others, though she is often shy at first. Phoebe is half Australian (on her father’s side), and is the best thing that ever happened to us. We couldn’t love her more.
 
PKU cooking has been a challenge for us. Phoebe has a low Phe tolerance (195mg daily) and we are often at a loss as to what to feed her that is low enough, healthy, and provides variety. Quantity of food is sometimes an issue too, with such a low tolerance. I have never been much of a cook, but am learning as I go, and getting better. We try to have a sense of humor. I cannot begin to say how very, very thankful we are to have found such a wonderful community in the PKU Listserv, and for this website of amazing recipes. The banana bread alone is worth everything to me. I have no idea what we would do without Cook For love. I simply do not have the words to express the depth of my gratitude. Thank you Brenda, thank you!
